HCLF Tofu & Seaweed Lunch

High-carb low-fat lunch: grilled tofu on a bed of vegetables with seaweed.

Soy is a great source of plant-based protein and contains phytoestrogens which are great for building up levels in those who are oestrogen-deficient (like I have struggled with in the past - that's for a future post)!

Plus seaweed is rich in iodine, which is essential for thyroid function, helping to regulate the metabolism. We prefer getting it in through seaweeds rather than through table salt with added iodine as this can cause water retention.

This dish contains:

- Grilled tofu with sweet chilli and bell peppers
- Baby corn
- Lettuce
- Seaweed
- Courgette
